This role encompasses oversight of the kitchen operations for both the Cafe and retail segment. Credentials Required:
- Formal qualifications in Commercial Cookery
- Extensive experience in Commercial Kitchens
- Proven ability in managing teams.
- Knowledge of HR practices and Retail Food Safety Standards
Key Responsibilities:
- Manage day-to-day operations of the kitchen and food preparation areas.
- Document, follow, and refine recipes and food presentation.
- Ensure efficient kitchen operations through effective scheduling and routines.
- Maintain operation manuals for recipes, procedures, and batch control.
- Oversee HACCP controls, batch monitoring, and food production traceability.
- Manage rosters, shifts, and authorizations.
- Uphold strict food handling and safety protocols.
- Optimize costs, sourcing, and waste management.
- Handle customer inquiries and orders related to food and catering.
- Resolve issues to uphold our standards.
