About the Role

As our Restaurant Manager, you’ll be the operational backbone of the restaurant, ensuring top-tier service, seamless operations, and a team that thrives under your guidance. Reporting directly to the Food & Beverage Director, you’ll be the go-to leader on the floor — managing, mentoring, and setting a strong example in both hospitality and professionalism.


Key Responsibilities

  • Host and lead the restaurant floor with presence and warmth, making guests feel genuinely welcome

  • Oversee all daily operations and ensure smooth, memorable service

  • Lead, train, and motivate a high-performing FOH team

  • Liaise with chefs and kitchen teams to maintain menu consistency and high quality

  • Prepare staff rosters two weeks in advance, staying within budget and compliance

  • Allocate staff breaks according to Award entitlements

  • Conduct pre-shift briefings and lead leadership meetings when needed

  • Record shift handovers and maintain clear communication across teams

  • Set and track KPIs and business goals in collaboration with leadership

  • Uphold all health, safety, and hygiene regulations

  • Resolve guest complaints professionally and follow through on feedback

  • Manage stock levels, ordering, and waste; conduct monthly beverage stocktakes

  • Work with marketing to promote specials, events, and seasonal campaigns

  • Oversee financial targets, cost controls, and reporting

  • Support the events team and manage C&E functions in the manager’s absence

  • Conduct performance appraisals and support People & Culture with HR compliance


What You’ll Bring

  • RSA Certificate and Food Safety Certificate (required)

  • Proven leadership experience in hospitality (restaurant, winery, or events)

  • A strong customer service personality with a natural ability to host and command a room

  • Experience managing rosters, stock, and budgets

  • A proactive and solutions-oriented mindset

  • Exceptional people skills, team leadership, and guest engagement

  • Financial and operational acumen
