Are you a Sous Chef who thrives in fast-paced, high-volume kitchens? This is an opportunity to join one of Melbourne’s leading hospitality and events operations, delivering exceptional food experiences across a major entertainment and sporting precinct.

Working alongside an experienced Executive Chef, you’ll play a key leadership role in a busy retail catering operation, helping deliver consistent, high-quality food to thousands of guests during major events. This is an ideal role for a hands-on Sous Chef who enjoys leading from the front, developing teams, and working in an exciting, high-energy environment.

The Role

As Sous Chef, you will support the day-to-day operation of a large retail kitchen while maintaining exceptional food quality, consistency, and service standards. You’ll work closely with the Executive Chef to drive innovation, mentor the brigade, and ensure every service runs smoothly.

Key Responsibilities

  • Support the Executive Chef with the daily management of kitchen operations.
  • Lead and mentor the kitchen team during high-volume service periods.
  • Maintain outstanding food quality, presentation, and consistency.
  • Assist with menu development and seasonal menu planning.
  • Manage stock, ordering, food costs, and inventory control.
  • Ensure compliance with HACCP, food safety, and workplace health and safety standards.
  • Foster a positive team culture focused on quality, efficiency, and continuous improvement.

About You

You are an experienced Sous Chef with a passion for delivering quality food in fast-paced environments.

You’ll bring:

  • Previous experience as a Sous Chef or Senior Chef in high-volume hospitality.
  • Strong leadership skills with the ability to train and motivate a large kitchen team.
  • Experience managing busy retail, stadium, event, hotel, or large-scale catering operations.
  • Excellent organisational and communication skills.
  • Sound understanding of food cost management, stock control, and kitchen administration.
  • A commitment to maintaining exceptional food safety and quality standards.
  • The ability to remain calm under pressure while delivering consistently excellent service.
