Our client operates a premier entertainment and hospitality venue in Darwin, Northern Territory. They are dedicated to providing exceptional service and memorable experiences to all their guests. We are searching for a talented and passionate Chef de Cuisine specializing in Chinese cuisine to enhance their culinary team.

About the Role:

As the Chef de Cuisine, you will lead the culinary team in the Chinese section, demonstrating expert skills in traditional and modern Chinese cuisine. Your role will focus on creating authentic dishes while maintaining simplicity and elegance in menu design. This position demands a proven track record of kitchen management including team training, cost control, and leadership.

Key Responsibilities:

  • Lead and manage the kitchen operations for the Chinese cuisine section.
  • Develop and design innovative and authentic Chinese menus.
  • Train and mentor kitchen staff in traditional and modern Chinese cooking techniques.
  • Oversee cost management, including food cost control and kitchen budgeting.
  • Foster a collaborative and motivating environment for all kitchen staff.
  • Ensure the highest standards of food hygiene and kitchen safety are maintained.
  • Engage with customers and clients to receive feedback and foster positive relationships.

Key Qualifications:

  • Extensive management experience in a high-end Chinese restaurant or 5-star hotel setting.
  • Deep knowledge and culinary skills in Chinese cuisine, with a strong ability to craft creative and authentic menus.
  • Proven track record of managing, developing, and motivating a diverse culinary team.
  • Experience in high-volume banquet operations and Yum Cha preferred.
  • Excellent interpersonal skills with a friendly and professional demeanor.
  • Availability to work flexible hours, including nights, weekends, and public holidays.
  • Legal right to work in Australia is mandatory.
